Multi layer dip


1 can of refried beans
12 oz of grated cheddar cheese
2 tomatoes diced
1/2 white onion finely chopped
3 avocados coarsely chopped
3 or 4 seeded and diced peppers of your choice
1 small can of sliced black olives
8oz sour cream
2 tsp paprika
2 tsp garlic powder
1/2 tsp cumin
1/4 tsp salt


Mix the refried beans with 1/4 cup of water and 1 tsp of paprika 1 tsp garlic powder and the 1/2 tsp cumin. Stir well.
Chop the avocados adding the rest of the paprika, garlic powder and salt

In a large shallow caserole dish layer the beans on bottom, then the avocado mixture, then add half of the cheddar cheese, a layer of sour cream then the remainder of the cheese, the tomatoes, peppers, olives and onions over the top.

Cover with plastic wrap and refrigerate for at least an hour.

This can be served with tortilla chips or just as a side dish

Sounds a lot like stuff I like to make; the main difference is that I like mashing up black beans rather than using refried pintos, and I tend to put a lot of cilantro in stuff like that.

Great flavours, easy to make, and an alternative to salsa all the time....thank you, Hammer, as it's really difficult to find any good Mexican food up here.

tshsmom: some people say avocados taste like lard. I have to spice them up to make them raste better,

mcewen: lemon juice works somewhat but as long as the avocados are covered by other ingredients they stay green.

Hey Bro--lost the Blog for a sec while I was adding favorites back and almost panicked- this is an awesome variation on many recipes- I will def give this one a try. They are all the same- But each one a LITTLE different in it's own way! Does that sound totally retarded?

Interesting seeing you post a recipe. I love multi-layered dip. Especially at parties.

I've bought it before and ate it all by myself, but I was feeling like I was 'in the closet' type of snacker, because I felt silly eating party food by myself.

What a coinkydink! I made refrieds last night. Put a can of Rotel, some chopped onion, bell pepper, and tomato in a pot along with some jalapeños and some cholula hot sauce and a shot of whiskey. The whiskey helps liberate the vegetable flavors...

I sprinkle in a little kosher salt and some cumin, then add the bans and stir. Once everything is incorporated and heated through I de-pan into a tray and top with sliced ripe olives and grated cheddar cheese and dinner is on!!

John: glad to hear the printer is working well. I bought a new HP because it was cheaper than buying new print cartridges for the lexmark lol

phosgene: that sounds good, I always wondered what the whiskey was for.

cheesy: mixing the avos with sour cream works great for this dish, but the people around these parts consider it heresy. Like beans in chili ;D

LOL- u ass and u were the one to tell me to get the Lex!!! You dog!!! :-) This think prints pics- really well and it not the photosmart- just the OfficeJet All-in One..and the ink is very reasonable- I think it's a little cheaper than my 35.00 HP

John: I loved the lexmark but $78 for new cartridges I just got a new hp for $50 and gave the lexmark to goodwill. The sneaky bastards at HP only give a "sample" cartidge with their new printers now. Oh well I guess when this one runs out I'll just buy another printer.

david mcmahon: The dip goes straight to the waistline but it's almost worth it :)

My Big Sis makes one similar. First time she made it for a family gathering, everybody hit it like Grant going through Richmond, and it turns out to be like eating a meal.

We could barely eat any of the main course. Good stuff.

I hate reading stuff like this when I'm at work and hungry.
