Zucchini Casserole


Here is a new one I came up with.


Zucchini Casserole


2 large Zucchini Sliced in 1/8 inch thick rounds


1 can of plain crushed tomatoes


1 tsb of garlic powder or 7 cloves of fresh crushed garlic


1 large onion sliced thin


8 oz of shredded Parmesan cheese


1 tsp salt


Cracked black pepper



In a covered casserole dish layer sliced zucchini, tomatoes, sliced onion, garlic, Parmesan, salt and pepper over and over until you run out of ingredients.


Cover and bake at 400F for 45 min


It tastes like lasagna and is pretty healthy for you

Looks great. Gonna try that one soon. I Love Zucchini, I always keep a few in the fridge, it's a great vege, I usually roast it or pan cook it.

Hey Ham~ I make something similar.. I add one can of drained green chilis and use a bit of cheddar instead of the Parm... I think I'l try the Parm next time... yum!

This recipe will definitely beat the crap out of a TV Dinner. I just need some meatloaf to go with it now. I like that one on the back of the Lipton Recipe Secrets Onion Soup carton. It's souper.

hey, I am thinking that an egg or two with pepper salt and milk beat and thrown over the top of that casserole and then topped with more parm would add protein and substance.

ah, what the hey, toss in some cheddar cheese too!

this is sounding good, but what about some bulgar wheat?
or feta cheese?

man, you start a recipe and I just come and bully it all up.

phosgene: I can't get yellow squash past the sautee stage but zuccini seems to hold up better.

bbc: What? my kids are never supposed to meet their relatives? I happen to like mine. Didn't you used to be a truck driver?

Cheesy: Since they are sliced thin they cook well raw but sauteeing could speed things up a bit.

dan: Yep need a drool tray.

paul F I like putting whole hard boiled eggs in my meatloaf. It looks cool whan you slice it.

In case you ever decide to give a crap about the lives of innocent vegetables consider this...they cry and scream the night before the harvest. I heard it in a Tool song. The carrots were screaming "let the rabbits wear glasses!"..For us it is just a harvest. For them it is the holocaust. Just sayin' :-|
