Quick and easy salsa recipe

6 Roma tomatoes
6 cloves of garlic
2 jalepeno peppers (whole stem removed)
1 cup of cilantro (washed)
1/2 medium white onion
1tsp salt
3 Tbs Lime juice
Wash everything and chop until it it almost smooth, using a blender, food processor, or an old fashioned knife and cutting board.
Mix all everything well and then stir in salt and lime juice.
The finished product should look like the picture above.
This makes a great tasting and healthy salsa that can be used for cooking, mixing with sour cream for dips or just eating with tortilla chips.
Any extra can be put in a plastic container and frozen. It will stay fresh in the refrigerator for over a week if kept covered.

I'm gonna be flip and say that my hands will smell a lot better if I open a jar of salsa. ;-)

I will have to look for cilantro. Unfortunately, I find they don't always label what's what. And I never use cloves of garlic. I'm way too lazy. I buy gigantic jars of minced garlic. I know it's not the same but the cloves are just too much trouble when I'm tired and cranky and want food desperately. And the hands don't smell then either.
I grew some Romas last year and some peppers - I will have to look for jalapenos this year - I like them so much more than the really hot ones.
I think I'll leave the jalapenos out... I just can't handle them... but I'm definitely going to try making this! Any other gems you want to share from Hammer's Fun and Tasty Healthy Cookbook? I'm trying to improve my diet, and I'm just not looking forward to living longer if everything is going to taste crappy.

A lot like mine, but I like adding a touch of cumino, also. When they are in season (I have a vegetable garden), I also like adding a bit of chopped green tomato or tomatillo. I

made a special batch just this weekend - only i add a cup of each of the following, chopped:
celery
carrots
bell pepper
and a half-cup of chopped radishes
use the whole onion, hammer! slap a habanero in it sometime...mmmmmmm...more for me...
I am not a salsa person but I should post one of our favorites later or tomorrow. We like a good chili cheese dip with those round tortilla chips.

Jeannie: I used canned garlic for cooking, I just throw the cloves in the food processor with the skins on, never had a problem with them, but doing them by hand is smelly.

I seed the jalepeno's when making this for my family up north
it cuts down the heat considerably,

bobg: I've got about 6 versions I make and the tomatillo one is one of my favorites. I put cumino sometimes but I often forget. It really adds a lot of flavor.

Like everything, homemade is quite often healthier. I have recently started to pay more attention to labels because I was diagnosed with diabetes. I had been buying salsa in a jar and when I saw how much sugar and saltwas in it, I was shocked. Just goes to show I have to be more careful.
