Valentines day


Nothing big going on today. I bought flowers and a card for the wife and I'm making Chalupas for dinner. It's too tough to go out, deal with a sitter, the crowds, rotten food and shitty service so I figure we will relax at home and open a bottle of champagne.


Chalupas: Family style

Deep fried corn tortillas drained on a paper towel
.
A bowl of seasoned refried beans
.
Chopped tomatoes, onions, jalepenos, shedded lettuce, and grated cheddar cheese all in separate bowls

Fresh Guacamole

Cilantro for garnish.

The great thing is everyone builds their own at the table just the way they like it.

Guacamole:

Smash three large hass avocados into a small bowl adding 1/2 tsp of garlic powder 1/4 tsp of salt and 1/4 tsp of pepper. Mix well but leave it a little chunky. You can also add a tablespoon or so of your favorite salsa to the avocados for an additional kick.

Spaghetti around here, nearly everyone's favourite. I deeply resent how restaurants seem to double their prices for VA probably for the whole weekend.

My hubby went to work for the night, but we spent the morning and afternoon together, so it's all good. I hate the commercialism of Valentine's Day anyway.

As a waitress, the 2 days I would NEVER eat out are Valentine's Day and Mother's Day! Restaurants are so overwhelmed on those days that you get totally shitty service.

Looks good, we just had sandwiches, since we both are sick. I would have meat with mine too though. (we are carnivores) hehehehe

Guac is so versatile. We make ours a bit different. smash the avacado's, minced onions, garlic (fresh) salt, pepper, fresh chili peppers if we have them, and a touch of sour cream to make it creamier.
