Techniques.
There are some things I've learned to do over the years, mostly from trial and error. Once I get something down to where it works well, I try to do it consistently.
I cook breakfast almost every morning. I think it's the most important meal if you plan to have a successful day.
Here's how I do it.
Potatoes:
Take a large potato, wash it and lay it on the cutting board. Make four deep slices lengthwise without going all the way through to the bottom and then six cuts across to the same depth.
The cut potato should still be on one piece but have a grid pattern of cuts. Turn the potato on it's side and make slices 1/4 inch apart. This should make nice cubes.
Put the cubes evenly spread on a plate, lightly salt them and microwave for 2.5 minutes.
While the potatoes are in the microwave, heat up a skillet to medium high and add a tablespoon of vegetable oil.
Place the microwaved potato cubes in the oil and toss until they are golden brown.
Put a couple of paper towels on the serving plate to soak up any excess oil. Lightly salt once more and they are ready to serve.
Eggs: When cooking for a lot of people nothing beats scrambled eggs. It's hard to keep any other type hot enough to get all the food on the table at once.
Here is my method.
Break several eggs into a bowl add a teaspoon of salt and some cracked pepper and whisk with a fork until they are homogeneous.
Heat a skillet, preferably cast Iron or a good nonstick on medium high until it starts to smoke.
Add a good quality olive or canola oil
Get a spatula and serving bowl ready.
Pour the eggs into the pan and turn off the heat.
Immediately use the spatula to pull the eggs to the middle from all sides, then fold them all over once. Flip them once and put them in the serving bowl when they are still a little bit moist. The residual heat will continue to cook them in the bowl. for an added touch you can add a little grated cheese on top.
Bacon:
It took me years to figure bacon out. It's such a damn mess but everyone likes it so much it's hard to leave it out.
Take a dinner plate and put three paper towels on it. On this place a smaller plate upside down on the dinner plate and drape several slices of bacon over it.
Microwave one minute per slice and watch them closely to make sure they are cooking evenly. The grease will run off the bacon and down onto the larger plate and be caught on the paper towel. This method makes the crispiest hassle free bacon slices in just a few short minutes.
If you don't have a microwave that cooks evenly, set the oven to broil and cook them on a cookie sheet for a minute or so to crisp them up.
Toast is a no brainer but should be left toward the end so it doesn't get cold.
Every kitchen is different, you may have to adjust these a bit your stove and microwave.

I love fried potatoes but the hubs loves bacon and refuses to eat it from the microwave so I have to pan fry it. Boo
I have never tried bacon in the microwave. Maybe one of these days I will give it a try. But thanks for the cooking tips. I am always trying to figure some way of getting breakfast out faster besides cereal and toast. LOL... During the week us girls eat cereal and on weekend is the only time I have to cook for all four of us. J gets up about twenty minutes before he has to leave for work during the week so that doesnt give us much time to cook and eat at 6:10 am in the morning.

except for camping...and at the Grands...I've only cooked bacon in the microwave for the past 20 years.

Oh, I've heard a lot of opinions on this one but I add a Splash of Milk to the Scrambled Eggs. Makes em just a tad fluffier.

Brushing or drizzling a small amount of maple syrup on the bacon is GOOD. Personally, I use the oven method...camping, fried.
You are so right, though. Think of your body as a machine and the food as the fuel...no breakfast and you're setting yourself up for all the bad food choices throughout the day. Plus: difficulty concentrating, agitation, headaches, and lethargy.

I like to cut the bacon into about 1 inch squares, cook it up in the skillet. Throw in some chopped onions and maybe mushrooms then throw in my beaten eggs and cheese and cook it all up. almost like an omlet, but not as hard. And we cook the eggs till they bounce, we don't like moist or wet scrambled eggs, I know some people do. But anywhoo the bacon, and other stuff cooks into chunks of the eggs. Good stuff.
We also think a tube of sausage, and the country gravy packets, and cook up some canned biscuits makes for a good quick breakfast.
I just microwave anyhoo and tip the fat away
Ooh. Ooh. Add Greek seasoning to the eggs and you're on. Mr. Froth is the bacon cooker and does it on the stove grill thingie. I've finally gotten over fretting about whether the grease canal will overflow. And blow us all up and such.
i add milk to the eggs, and use real butter... nothin beats real butter, olive and canola oil has just as much sometimes more than actual butter.

omg it all sounds sooooo good. We are trying to stay away from eggs and bacon due to cholesterol/tri-gliceride issues...but we treat ourselves every now and again.

I stick the entire chicken in the microwave for 1/2 an hour, then cut it open and remove the eggs - perfect every time!! If you shake the chicken first the eggs will come out scrambled. The Bacon is a problem as it is tough to get an entire hog in most microwaves.
Who knew things like bacon and eggs were available anywhere but Bob Evans? That potato thing was cool, I'm always chasing them all over the cutting board.

Mmmmm, sounds great. My mom puts sour cream in her eggs before she puts them on the skillet. Mixes it in. adds a great flavor to them. Try this little trick too: Take a roll of Garlic butter crescent rolls (makes 8 rolls). Unroll them so that you have 8 triangles of dough. Put a daub of honey mustard on each, and a wedge of cheese, and a fist full of thin sliced sandwich ham, sliced in half to fit. Roll the ham in the crescent roll and bake for 15 minutes at 375. Delish.
Yep. Hammer, I am with you on this. Thanks for the tip on the potatoes. Those are the ones I have issues with. Especially in the AM before my 2nd cup of coffee.

Dear FHB: Thank you for the suggestion of the sour cream in the eggs...had cream in them, but this also sounds good. However, the crescent rolls sound mighty yummy!

i like to cook all that in a skillet along with onions and peppers, cheese and fresh cubed tomatoes atop - serve with warmed tortillas as a side or make breakfast burritos.

I'm not built to eat breakfast - my stomach doesn't wake up until 11. If I eat before then, my stomach is slightly nauseous all day which makes me eat more trying to settle it.

The microwave tip for the bacon sounds great, but I can't give up my scrambled eggs cooked in bacon drippings (double whammy on the fat and cholesterol). Horrible for me, but tasty as hell.

Your idea to nuke the potato first for a couple minutes before frying is a great tip to keep in mind. The fried bacon works for me though because after you pour out the grease, there's just enough left over in the frying pan to give the eggs a bit more flavor.
You are nothing short of a culinary god. Well, I'm off! Have to go microwave a pop tart for the kiddos.
If I want a good breakfast without the mess, I go down the street a few blocks to the local diner and pay them $5.25 to do the whole damn thing for me.
Lummy! All that effort first thing in the morning! Pass me the packet of cereal please!
