Biscuits and gravy.


Jeanie's post got me thinking about one of my favorite breakfast foods

Baking Powder Biscuits
Ingredients: 2 cups all purpose flour
3 tsp. baking powder
2 tsp baking soda
4 tablespoons butter or shortening
1/2 tsp. salt
3/4 cup milk
In a large bowl add flour, baking powder, baking soda, and mix well. Cut in shortening or butter using your hands until the flour looks like fine crumbs. Add milk, stirring until soft dough is formed. Turn out on slightly floured surface and lightly knead for 30 seconds, pat dough flat 1/2 inch thick and cut with 2 inch biscuit cutter or a skinny glass. Bake on ungreased sheet in a 400 degree oven for 12-15 minutes.

Gravy.

Fry up your sausage and keep aside about three tablespoons of the drippings in the pan and stir in about 2 1/2 tablespoons of flour until well blended. Heat the skillet on medium and stir until flour mix begins to bubble slightly. Add two cups of milk and bring to a low boil until gravy is thick and smooth. Salt and pepper to taste.


Pour the hot gravy over warm biscuits split in half. They go great with scrambled eggs, sausage and juice.

This morning, I had the biscuits in the pan before the oven preheated and while bicuits were baking I had plenty of time to make the eggs and cream gravy. We had mimosas and hot coffee too. I need a nap.

LOL. I just came from her blog. I get the feeling she thinks biscuits and gravy are a US wide thing though. They don't eat biscuits and gravy in the North where I grew up.

I love this southern tradition, minus the sausage. I know, it's wrong but I can't help it- just not a fan of sausage.

That sounds good. I might just write this one down. And give it a try tomorrow for me and the girls I know Jeff doesnt like it but all I have in the freezer is bacon though. I guess it will have to work for now.. LOL..

I love that stuff and if I think my cholesterol is getting to low, I love to add in a big fat infused chicken fried steak too.

My wife makes great biscuits and there is an art to it. You can't overwork the dough.

I love them the next morning too, split open with butter and toasted under the broiler. Cheese is good on them too all toasted.

Thanks for the plug Hammer. I doubt I will ever do biscuits and gravy for breakfast. I'm sorry but the thought of making gravy out of sausage fat is gross. We do make biscuits too - but usually have them with stew. Gary will make soda bread and fry it in bacon fat which is pretty disgusting too. Not so bad if it doesn't soak up much fat but still. I do like a piece of bread with roast beef gravy poured over it though.

Oooo come to Mama. I love the days when I have time to make those kinda of breakfasts. I always pick up bacon and biscuit mix on hand for Saturday and Sunday mornings. Breakfast for dinner is also a big favorite for me too.

One of my wife's favorite meals. Personally, I prefer the biscuits on the side, and the gravy (either sausage like yours, or redeye gravy) on grits.

we don't eat those with gravy here. In fact we don't call them biscuits at all. They're scones and we eat them with jam and whipped cream (not out of a can of course), or just some butter. I love scones. Are you making this gravy thing up?! ;)

I dont know how to make gravy. It never works right. I think that is against the law in the south so dont tell.

Those biscuits look WONDERFUL Hammer. Having them sound sgood at any time of the day when they are home-made to me. I love mine with butter and honey.

This is my most favorite breakfast, but I use half & half in my gravy instead of milk. I can actually feel the hardening in my arteries as I eat every wonderful bite!

i love biscuits and gravy, taters and gravy, rice and gravy, meat and gravy, steamed vegies and gravy, gravy as soup, gravy as a dippin' sauce, gravy and grits, gravy as a lotion...just kidding on the last one - everybody knows it makes a better hair conditioner!

have you ever thought of doing a cookbook with all your little tidbits of information - they have fundraisers for it and they're relatively cheap and you could donate the proceeds to your favorite charity? and we all know charity begins at home, no?

It seems to me very strange to eat biscuit with gravy, and saussage on the top of that! but your recipe looks great, and most probably what you call biscuit is some kind of bread, it looks like our petit pain. I would taste it with pleasure.

Next to Eggs Benedict, this is my favorite breakfast meal. Your version is making my mouth water...at 9 p.m. I don't know about the mimosas, but biscuits and sausage gravy with a side of scrambled eggs sounds like a plan for the weekend.

This is one of Shark's fav. breakfasts too! It's a weekend breakfast on special occassions at our house.

This working girl doesn't have the time or energy to perform such a cooking feat all the time!

AAAAHHHH!!!

You have resurected my 10 year battle of trying to locate the best HIGH ALTITUDE biscuit recipe - and also one that WORKS. None of the others have resulted in anything but little flour colored-hockey pucks. :(

I hope you are satisfied. :p
