The best avocado salad ever

This recipe will serve at least 8 to 10 people you can cut it down for smaller servings.
Ingedients:
3 large ripe Haas avocados or 5 small ones

4 large Jalapenos try to pick some red and orange ones from the produce bin

8 oz of cheddar cheese
One cup of diced red onions (optional)

1 Tbs Lime juice

1 tsp salt


Cut the avocados in half lengthwise and remove the seed. Use a small paring knife to score the avocado flesh into a grid. The cubes should be the size of an eraser on the end of a pencil. Carefully scoop out the cubes into a medium serving bowl with a metal spoon.

Cut the jalapenos in half lengthwise and de-seed them under running cold water. Be sure to remove the white around the seeds as well. Once finished, wash your hands thoroughly with soap and warm water.

Dice the jalapenos into pieces similar in size as the avocado and add to bowl.

Dice the cheese using the same size grid pattern and size as the avocado and add to bowl.

Sprinkle salt and lime juice evenly over the other ingredients.

Fold the avocados, cheese and jalapenos together being careful not to smash up the avocado cubes.

Cover and refrigerate for at least 15 minutes prior to serving.

This can be eaten as a side dish, garnish or as an appetizer with tortilla chips.

Don't worry about the jalapenos. When the seeds and pith are removed most of the heat goes away, the other ingredients also help to absorb the remaining heat.

This dish was prepared for me a few years ago and I have to admit it was one of the best things I've ever tasted.

Nobody ever believes me when I tell them this, but avocados make me violently ill. I am not kidding. The "I wish my stomach would just explode and kill me and get it over with" kind of ill.

But the cheese and jalapeno part sounds great.

Yea okay, everytime someone tells me that sort of thing I have to chug a whole gallon of milk. Then it still burns like Hell...

I told you I was a wuss.

I'd have to leave that out of it altogether.

it's refreshing.

alan: I know that certain types of fats make me ill. I'm sure you have a bonifide allergy, replace the avocados with diced mangos and jimica and the recipe works that way too.

gunz: lol I used to take raw hot peppers to school in my lunch, eat one, whole in front of my friends and act like it didn't bother me. they didn't want to look like wusses so they ate one too then ran around like a headless chicken.
I was in serious pain too but the prank was worth it.

Sounds really yummy - if I ever see avocados at the grocery store - how big is big? And I only ever see green jalapenos. sigh.

nomas: good idea as long as they were cored and seeded. maybe red bell peppers too for extra color.

Jeannie sometimes there will be some ripened red ones mixed in. There are usually two sizes of avocado one about 3 inches and one about 5 as long as they are ripe but not too squishy any kind will work.

nomas: the at&t Uverse setup is fantastic. It's lightning fast and I no longer lose posts in blogger.

I'm not a big fan of jalepeno's, but my hubby works with this guy that grows the sweet banana peppers. I mean they aren't sweet, but they definatly don't have much heat. My mother in law puts them in her Pinto beans. yummmmmm good stuff.
